Sorry, I made some mistake in the earlier comments. Having a will alone can not avoid going through probate and pay probate fee. It prevents the court from deciding for you, who has custody of your children and who receive your assets.

Each state has its own laws about this. But in my state, you need to have 2 witnesses who are not beneficiaries to sign on the will.
