Peach cobbler (桃子派)

We harvested a lots of peaches from our peach tree this year again. I canned more than 20 bottles of peaches. Peach cobbler is our favorite desert. They are so simple and delicious. You can make them with either fresh peaches or canned peaches.
今年桃树又收获不少.我做了20多瓶的桃子罐头.乡村桃子派是我们最喜欢的甜点之一.可以选用新鲜桃子或罐头桃子.简单易做又美味.


1) Make pie dough: (see A, B and C)
1 and 3/4 cup unbleached flour
1/2 cup butter or shortening
1 Tbsp sugar
dash of salt
4 Tbsp cold water
2) Mix peaches with 1 Tbsp of sugar and 1 Tbsp of corn starch or flour. Arrange peaches in the middle of the dough.(See D) Drop few rasberries on the top. (See E) Fold the dough as below. (see F) Brush egg on the dough and sprinkle some sugar on the top.
先做派皮(看下图A和C),面粉,奶油或shortening,糖,一点盐混合好,加入冷水,和成面团,擀成一个大面片片待用。取一中号盆,放入桃子和糖,再放入一大勺淀粉或面粉。搅拌均匀,把桃子摆在派皮的中间,(看下图D)再摆上红莓果,派皮翻过来,刷上蛋液,撒上糖。


Bake it in a preheated oven for 30 minutes at 375F, or till golden brown. Remove from oven and let it cool complete and serve.
放入预热好的烤箱中375华氏度,烤30分钟,或者直到外皮金黄,取出晾凉即可切块吃。


They are simple, healthy, sweet treat. They are delicious.
