Bagels and Madeleines (rev 1)

Weekend is here finally. Weekend is my baking day. Haven't make bagels for a while. When did I make bagels last time? Maybe August or September? I don't remember. Kind of craving bagel sandwich for my lunch box. Well, let's make some.

4 and 1/2 cup bread flour
9 to 11oz water
1 tbsp sugar
2 tsp yeast
1 tsp salt

Mix all together. I let my stand mixer do the trick. Divide the dough into 12 pieces. Make bagel shape. Heat water to broil and broil the bagels 1 minute on each side. Place them on the baking sheet pans. Bake them in pre heated oven for 15 to 20 minutes or until golden brown. I like the best when they are warm. Cut it in half and butter it. Life is good....







While is waiting for bagels, might make some Madeleins as well.
Madeleins are tender, spongy cookies. Some people call them tea cookies or cookie-cake. I love my non-stick Madelein baking sheet. By the way, I recommend to purchase high quality, heavy duty baking sheets. You will find them so easy to work with. And they will stay with you for a long time. Anyway, here is my recipe:

2 eggs
1/3 cup sugar
1/4 tsp salt
1/2 tsp vanilla extract
1/4 tsp almond extract
1/2 cup flour
1 tsp orange zest
1/4 cup butter melted

Beat the sugar, eggs, salt for 5 minutes until pale and fluffy. Beat in vanilla and almond extract. Beat in flour at low speed. Fold in orange zest and half of melted butter. At last, fold in the rest of melted butter. Scoop the batter into mold. Bake the cookies in pre heated oven at 375F for 10 minutes or until the top spring back when lightly touched. I love them warm and with a cup of tea. You will like them, too.
