在俺们这儿，这叫＂面鱼＂，换在北京，这叫＂油饼＂，换在别地儿，叫做＂面鱼儿＂或＂油饼＂的又各另有所指，美食如人，名字可以一样，但未必是同一人．

老北京的油饼俺吃过，除了咸口的还有甜口的，也许是饮食习惯的执拗，还是觉得山东的面鱼好吃，味儿正！这一点类似于＂天底下最好吃的是妈妈做的菜＂，八九成也是那份执拗吧！

以前，面鱼和油条除了形态不同，最大的区别在于，油条是直接和面炸，而面鱼是发酵过的，如今，我们将油条的做法也改良了，摒弃了明矾和泡大粉，也采用了相同的发酵法，但依然从形态上区别着油条和面鱼，而就是这形态的区别，炸的温度和手法又有不同的讲究，最后的成品味道自然也是各有千秋的．

相比于油条的＂单薄＂，LG更喜欢面鱼的＂实惠＂，一口咬下去不似油条的＂空＂，而是＂满口＂，有＂内容＂，因为接触油的比例减少，所以油腻感也相对小一些．

小贴士：

因为面鱼的厚实，所以要求炸的温度不易太高，否则容易出现外焦里不熟的现象．但也不能太低，油温太低，不利于发泡，而且面坯会吸太多油．

总之，油温的控制要靠经验掌握，多练习，一两次不成，没准三四次就找着感觉了．

俺真的是偷懒，这些东西，俺是会吃不会做第。每次回家，妈妈一定炸面鱼的。

赶大集时，有很多的炸面鱼的摊位。

这确实是我们家乡的特色
