Shanghai Drunken Crabs

1 lb. fresh crabs
Hua Diao Jui (Chinese dry cooking wine)
Chinese White Wine
1 teaspoon salt
1 tablespoon sugar
1/4 cups green onions, about 2 inch long
1 teaspoon ginger powder or chopped ginger root
1 tablespoon lemon zest
1 tablespoon whole peppers

Add 5 cups water, sugar and whole peppers; bring it to a boil; add chinese white wine and hua diao jui; contine boiling for about 15 minutes.

Clean up the crabs and use paper towel to dry out. Place them on a plate and add the mixture, green onion, ginger and lemon zest. Coat the crabs with the sauce. Steam the crabs dish for about 30 minutes or until ready to serve.

When you serve, make sure you drain out the sauce.
