Put olive oil in heavy pan, brown the shallot, celery, red pepper, stir fry for 2 minutes.

Add mussels, 1 cup white wine, cover the pan until all the mussels are open, (if the one is not open, discard them).

2 (15oz duck breast, salt, pepper, preheat oven to 375F. remove silver skin from meat side of breast. Rub with salt and pepper, place duck in oven proff skillet (med heat) skin side down for 7 min, turn breast oven and put pan in oven to finish cooking. About 8 minutes.(medium) or until desired doneness. Remove from oven and let breast rest 5 minute, before serving.
For the sauce,
1 cup chicken stock, 1 cup white wine, 1 shallot (chop fine), ¼ cup honey, ¼ cup cilantro, ¼ cup pine nuts, (toasted) white pepper.
Add stock, wine, honey and pepper to saucepan, and reduce until liquid thickness slightly. Add pine nuts and cilantro. Drizzle over warm sliced duck.

300 ml sugar, 00 ml water , 4 drops of vinegar.

Peel the oranges, be careful not to break the wedges and to remove as much of the white parts as you can. Leave the orange wedges to dry in room temperature for a couple of hours. Add the drops of vinegar and let it simmer until it is beginning to turn yellow.
- Dip half of the orange wedge, put it on a baking sheet paper and dip the other half when it's cooled down a bit. Do the same with all the orange wedges you want to dip. Do the same with the strawberries.
