说实在的,我还真觉得如果做菜成分固定有好处,否则,只能偶尔做出那味道来,,,

you can say the same thing to Chinese food.
I just enjoy both chinese and western and all other regions food and cooking style. I learnt a lot from others. I don't think Chinese food is necessary the best in all aspects and non-chinese cannot cook decent chinese food.
Americans take it more serious when they decide to do something. When my husband decide to learn Chinese cooking, he learnt fast and well. While my mother cooks all her life and still cooks bad bad chinese food. I apperciate American's attitude.

thanks. All i try to say is be careful not to generalize "Americans". If you have no acturally live with them, you don't really know them. Even you have American families, still, you only see small portion. We are more alike than different.
it's a misconception that western cooking needs percise measurement. ONLY baking pastry needs strick measurement. All other cookings are just like chinese cookings, based on experience.
the American cooking books and cooking show tells the details of the measurments, but that's for teaching purpose. Chinese cooking book could be very precise as well.

my husband is a white American. he can cook very good chinese food. I taught him the basics and he picks up more along the way from watch tv, reading cooking books, watch on line vido, etc. Now some of his cooking is better than mine.

Once I asked my husband to make some rice. He had to read the mark on the rice cooker: measurement of rice vs. water... And another time, I just told him verbally how much rich and water… and then rice came out as porridge… ha…. When we cook rice, do we even have to think or read anythin? no, it all depends on our experience and the feel…that pretty says about the difference between us and the westerns….
Do you think the Westerns really like Chinese food? not really. Out of curtesty, they always tell you how good your food is, how much they like it...but actually they don't/ at least most of them... living with one for 15 years, i know how they are....
