做法:
1、猪肉先片成大片,再顺纹路切成丝,配料也切成丝。豆豉用水洗净略泡。葱姜切丝,大蒜切片。
2、肉丝用湿淀粉上浆,入温油滑开,捞出待用。
3、另起锅烧热,放入花生油,加入豆豉慢火煸出香味,再放入辣椒丝、葱姜蒜煸香,随即加入配料,急火炒熟。
4、接着放入滑好的肉丝,加绍酒、精盐、酱油、味精调好味,颠翻炒勺出锅即可。
