简单的美味,平凡的幸福:乱炖牛肉,黄芽菜肉丝

1.老公非常喜欢吃炖的牛肉块儿。红烧牛肉,日式咖喱牛肉,罗松汤,土豆炖牛肉,萝卜炖牛肉,番茄炖牛肉。。。
通常,我就买3.99一磅的beef for stew. 有人“教育”过我,什么样的牛肉才叫极品,才叫高档。超市里3.99一磅的牛肉如何能入口?!
他们说,真正好的牛肉,教你吃一口就会有流泪的感动,在美国是没得卖的。
我是土人,虽然也吃过百余美金一客的牛排,但还是更喜欢炖一锅3.99一磅的牛肉,看着老公吃的满头大汗。

做的人用心,吃的人开心,也许美味的定义就是这么简单的。

下面,和大家分享一下这个自己瞎想出来的乱炖牛肉。
为了不让LG吃腻同样的做法,我尝试着放了一些新的原料和佐料,没想到还挺好吃。

主要原料:牛肉一磅,洋葱一只,刀豆20根,土豆两只。
佐料:葱段姜片适量,五香八角3-4颗,蒜两瓣,干辣椒少许,韩国辣椒酱1大勺,鲜橙一只。

做法:牛肉飞水。先将小半颗洋葱切丝,与葱姜蒜,干辣椒炒香。

加入牛肉翻炒,直至满屋子都是香味,放韩式辣椒酱继续炒。

将炒好的牛肉放入半锅热水中,挤入鲜橙汁(半颗就够了),加入八角,两勺生抽,半勺老抽,一勺黄酒,一勺糖,盖上盖子慢火炖45分钟。同时,将土豆和刀豆用小火煸至表面略硬。

45分钟后,把刀豆和土豆,还有剩下的半颗洋葱,放牛肉锅里用中火煮15分钟。
然后开大火收汁。不用收得太干。

味道浓郁,辣中有橙子的清甜,非常适合秋天的一道菜~。

2.黄芽菜炒肉丝是以前家里外婆和妈妈经常会做的菜。有时候会放香菇/冬菇,有时候只这两样单炒。我时常感到疑惑,这样家常到不能再家常的原料,简单到不能再简单的做法,怎能拥有如此的清香和鲜甜。

原料:冬菇7-8朵泡软切丝,猪里脊一小块,黄芽菜/白菜小半棵

做法:肉丝加盐,酒,葱,淀粉稍腌一会儿,热锅冷油划散,盛出。
另洗锅热油,将黄芽菜和香炒软,放盐,糖。加上肉丝略炒,用淀粉水勾芡。

出锅,装盘。

这道菜不需要加鸡粉,酱油,耗油,胡椒粉。这些都是画蛇添足。只要盐和糖,最多再加一点味精,就会非常清鲜可口。

也许,做菜和生活一样,有时候,平平淡淡才是真吧。
