1 cup self-rising flour
1 cup self-rising cornmeal mix
3/4 cup sugar
1 1/2 tablespoons finely grated lemon zest
1 1/2 sticks butter,melted and cooled
3/4 cup milk
2 egg yolks
1 egg
1 1/2 cups raspberries
3 tablespoons sugar
Preheat oven to 400F. Grease deep skillet or 10" skillet. Mix flour,cornmeal, sugar, and lemon zest in a bowl. Mix butter,milk, yolks and egg in another bowl and stir it into flour mixture. Gently stir in raspberries.Pour into skillet and bake for 25 minutes in middle of oven. Sprinkle with sugar and bake another 5 minutes.
