Good cooking oils are mostly monounsaturated fat that are stable in high temperature. The bad guys are saturated and trans fat.
Canola oil is among the best cooking oils.

Rapeseed oil contains very high levels of erucic acid, a compound that in large amounts can be toxic to humans. The canola plant was developed by natural crossbreeding from the rapeseed plant. Canola oil is produced from canola plants, not rapeseed plants. Canola plants have very low levels of erucic acid.
Canola oil is generally recognized as safe by the Food and Drug Administration. In fact, canola oil is very low in saturated fat and has a very high proportion of monounsaturated fat, so it's a healthy and safe choice when it comes to oils

1. erucic acid is C22; this is high in rapeseed but actually low in Canola oil. Oleic acid of C18 is abundant in Canola oil which is editable.
2. Canola oil itself is good, but modern oil processing and deodorization causes hydrogenation of its high Omega-3 fatty acid into transfat as high as 40%.

The only thing I don't understand is, if transfat is as high as 40% in the result oil sold on shelf, how can FDA allow manufacturers not to label it? This I find really hard to believe, thus I tend to believe Canola oil is still safe and good for health.

My understanding is that canola oil sold on shelf is not hydrogenated, and it was not heated during processing. Hydrogenated oil normally is solid.
