近日想吃点给力味重的东东,呵呵,想到了“口水鸡”,去网上找寻方子,根据手头现才,试做了一下,感觉不错,特献上,与众分享,个人以为,做“口水鸡”其实并不很难,也并不需要特别的鸡种,当然有好鸡是好事,但用几毛钱一磅的鸡腿也可做出美味佳肴……上菜?

主料:鸡大腿2只,付料;花生、香菜、芝麻……调料:姜、葱、蒜、花椒、辣油、糖、香醋…

先烫鸡,鸡烫的好坏决定了鸡的口感,我是用宽水烧开,入鸡腿10秒左右,取出鸡腿用冷水急冲,再烫、再冲,最后用微火、水似滚非滚烫煮15分钟,关火闷水10分钟,以筷子插入肉厚部无血水即捞出,入凉水中泡半小时起出改刀装盆,将以上调料调至小甜小辣,回味酸麻即可淋入盆中,花生炒熟压碎,芝麻炒香一并放上即可。
