炝土豆丝

材料:五个大土豆,一些干虾仁(泡软)一个小青椒,盐,花椒油.(常用味素的也可加点) 1.干虾仁泡软,小青椒切薄片备用,2.土豆削皮洗净切细细的丝,过三遍冷水洗掉淀粉空干水份,宽水烧开下土豆丝,另准备个大盆放宽冷水备用, 土豆丝在开水了焯一分钟后捞出过冷河,再空掉水放在拌菜盆里,3.把泡好的干虾仁,切好的小青椒摆在土豆丝的最上面,撒上盐,4.锅里下三汤勺量的菜油,同时加进一汤勺的花椒粒,等到油热花椒味很浓花椒变深色,关火.5.趁热(响油)浇在虾仁,青椒和土豆丝上,有吱吱啦啦的声音,(我一般都用小沙网在下面接着,把花椒过滤出来,吃时候就方便很多)6.拌一拌尝一尝,可调节一下咸淡,就可上桌了.特点:清脆爽口,一口接一口.主要是有加虾仁和小青椒,味道非常的清香,爽口.注:炝拌土豆丝,一定要切的很细,口感才好噢!
