The picture showed that you trimmed most secondary branches. I have to guess that fruits are born on new braches that come out in spring. Am I right?

I wounder what you put on the tree, the white color stuff.
My Percemmon trees are very old, over 50 years. They produce too much and broken several branches. What should I do to protect the tree?
Also, there are so many, 20-30 wild percemmon trees with small fruits. Since my big trees produced so much, may be 3-400 lbs I did not pay attention to the wild trees. I learned something from you. I hope I can transplant some fuyu to them.
