1. First, nitrite is a naturally-occurring compounds that are a metabolic product of microbial digestion of wastes containing nitrogen, for example, animal/human feces or nitrogen-based fertilizers. What is related to nitrite is nitrate that has to be reduced to nitrite first;
2. Nitrites are not known to cause cancer directly. Nitrites need to combine with naturally present amines to form carcinogenic N-nitroso compounds, especially during the process of cooking meats that contain relatively larger amount of amines;
3. We do understand that every bit of nitrite counts but we have to be realistic in this world. The question we need to answer is how much benefit at what cost. As a toxicologist and also years of experience in epidemiology, my opinion is that nitrites in the stored cooked vegetables are minimal and need not to be worried. We have much more to worry that stored cooked vegetables. For example, processed meat like hot dogs;
4. Most POPULAR diet health advices on newspapers and magazines are not written by qualified professionals. By POPULAR I mean they are from laymen. Even clinical doctors may not qualify to give this kind of advice since they do not have toxicology/epidemiology/nutrition training;
5. My advice is: Do whatever you want to do but wasting food is not something we encourage and it's not good for the environment either.
