a little less than 300g bread flour such that the mixture is not that stiff.

300g water

a pinch yeast



. mix and rise 24hours

280g bread flour

a handful instant oats

a handful sesame

1 1/4 tsp salt


1/4 tsp yeast

dough cycle, rise till double size in about 4 hours.

shape, let rise in about 1 hour.

420F, dutch oven pre-heated together,

dump in bread, 30 min baking.


remove lid, another 20 min baking.
