彩虹料理-南非菜给公婆践行

感恩节过去,公公婆婆要回家啦。做了一顿南非菜晚餐给公公婆婆践行。

南非菜并没有像我最初想象的那么古朴粗狂,充满原始野性的纯非洲风情。因为深受荷兰和英国两个殖民母国的影响,又大量吸收印度,马来西亚菜的特色(荷属东印度公司曾经贩卖了很多印度,印尼,马来人来好望角做奴隶,如今有20万人口),还有其他欧洲移民如德国,法国,意大利等等,包括邻国葡萄牙殖民地莫三比克的料理,再加上本地的材料和做法,南非菜就和这个国家的别称“彩虹国度”一样,是各国风味的大熔炉,品种多元,口味丰富,碰撞出很多火花。

Samosa是印度菜对南非的贡献,如今在南非是最常见最受欢迎的小吃之一了。我偷懒,这是买的。

Oxtail Potjiekos 红烧牛尾

Potjiekos是一口三脚铁锅,用慢火燉烧,通常在野外烹煮。我就用我家的焖烧锅代替了。这是我第一次煮牛尾,买到了很新鲜很漂亮的牛尾,一大早就开工,还倒光了一瓶小贵的红酒(没敢告诉老公是他刚花了二十多块买的)。牛尾是活肉,燉到酥嫩入味,轻轻一拨就脱骨,骨节之间还有胶质包裹。一整锅红艳艳,飘着浓郁香味,公公婆婆还有老公都很喜欢。

Bobotie咖喱肉派

Bobotie是南非的代表性料理之一,我觉得像meatloaf。简单说就是绞肉炒香加上鸡蛋,各种香料、醋、果干、果酱、苹果、杏仁,最后浇上鲜奶和鸡蛋的custard。这个菜口味层次丰富,绝对有火花,是这顿饭的明星菜。

Ingredients
• 1 lb ground beef, lamb, pork, or combination
• 2 tablespoons butter or olive oil
• 1 large yellow onion, chopped
• 2 cloves garlic, minced
• 1½ tablespoons curry powder
• 1 teaspoon turmeric
• ¼ teaspoon cumin
• ? teaspoon nutmeg
• ? teaspoon cloves
• ? teaspoon allspice
• 1½ teaspoons salt
• ½ teaspoon freshly ground black pepper
• 2 tablespoons apricot jam or mango chutney
• 1 tablespoons malt or cider vinegar
• 2 slices stale bread, crusts removed, and cubed, soaked in about ½ cup milk.
• 1 large egg
• 1 cup diced apple, peeled and cored (about 1 medium-sized apple)
• ¼ cup finely diced dried apricots
• ¼ cup golden raisins
• For the custard:
• 1 cup whole milk
• 2 large eggs
• ¼ teaspoon salt
• ½ teaspoon turmeric
• For topping:
• 6 bay leaves
• 2 tablespoons slivered almonds

Instructions
1. Preheat the oven to 350 degrees F. Grease a medium (about 8x10) casserole dish.
2. Heat the butter or oil in a large frying pan and saute the onions and garlic until soft and translucent. Add the ground meat and cook until most of the pink is gone. Add the curry, turmeric, cumin, nutmeg, cloves, and allspice and cook for another 2 minutes.
3. Add the salt, pepper, apricot jam and vinegar and stir to combine.
4. Squeeze excess milk from the bread and add the bread to the meat mixture. Stir to combine. Add the egg to the mixture and stir to thoroughly combine.
5. Add the apples, apricots and raisins and stir to combine.
6. Scoop the meat mixture into the greased casserole dish.
7. To make the custard, combine the milk, eggs, salt and turmeric and whisk together until blended. Evenly pour the custard over the meat mixture. Place the bay leaves on top and evenly sprinkle over the slivered almonds.
8. Baked uncovered for an hour or until the mixture is set and the top is golden brown. Serve with yellow rice

大家不要被这个看似复杂的食谱吓倒,其实就是把肉末炒炒,然后加各种材料去烤就好。那些香料可以在店里的bulk部门买一点点就好。过程其实很简单,youtube有epicurious的教程。这个周末打算再做一次。

Geel Rys (Yellow Rice) 黄米饭

Bobotie和这个饭是经典搭配。带有甜味的米饭,是小朋友的最爱。
Ingredients
1 Tablespoon sugar
½ teaspoon turmeric
1 Tablespoon salt
2 Tablespoons butter
1 cinnamon stick
1 cup raisins
1 teaspoon lemon rind
2 cups white rice
Procedure
In a large pot, bring 6 cups of water to a boil.
Add all the ingredients (except rice) to the boiling water and stir until the sugar has dissolved.
Add the rice, cover, and simmer for 20 minutes. Remove the cinnamon stick and lemon rind before serving.

Komkomer Sambal (Cucumber Relish) 黄瓜丝
清爽解腻的黄瓜,配重口味的肉菜是必备。

Ingredients
3 medium-sized fresh cucumbers, peeled and seeded
1 teaspoon sea salt
1 Tablespoon cider vinegar
1 clove garlic, finely minced
1 teaspoon jalapeno pepper, finely minced
Procedure
Grate the cucumbers on the large holes of a hand grater into a salad bowl.
Sprinkle them with the salt and let them stand for 2 hours.
Drain them in a colander, pressing out the liquid.
Add the vinegar, garlic, and jalapeno pepper and mix well.
Cover with plastic wrap and chill for at least 1 hour.
Serves 6.

鲜奶塔是荷兰人传承给南非的甜点,因为鲜奶对鸡蛋的比例高,比蛋挞轻盈,奶香浓郁。还蛮容易做的,一次成功!
