If you plant a seedling, it takes a couple years to bear fruits. Using seeds does take much longer. The bigger and older the sapling, the faster to get fruits. I bought a peach tree last year from a Tractor Supply store, and there are over a dozen peaches now. I think it's probably already three years old when I bought it. My apricot tree starts from seeds, it takes about 8 to 9 years to bear fruits. I planted it when my older son was conceived and he's 8 years old now.

Loquat tree cannot live in very cold places, zone 8 is the lowest. And it doesn't bear fruits unless there's no frost in winter, zone 9 and above. So Florida is a good place, North Carolina isn't. My loquat tree is just a decoration, it has grown a lot but not born fruits. We're in zone 8b. The flowers usually come up in December. Sometimes it could be

Crabapple is the native wild apple that deer like to eat. You should try pomegranate seeds. It doesn't need to be grafted.

Not all the fruit trees need to be grafted. Pomegranate doesn't need it, apricot doesn't need it. Apples and peaches need to be grafted, otherwise its fruits will be like clones from the mother plants, or taste crabapple. The clones are not guaranteed to have the traits desired and less disease resistant.
