聚餐,蔬菜篇-葱油胡萝卜土豆泥、素火腿、怪味花生、沙拉、牡丹慕雪

周末叫上些朋友补过生日(我真的是很在乎生日的人呀),准备了些小菜。因为全是一个人做,所以多了些凉菜,可以每天准备一两个。先看看素的:

怪味花生: 

 

做法:熟花生 适量,白糖 1/2杯, 辣椒粉 1大勺,盐1/2小勺,白醋 适量 (还可以加花椒粉,我没加)

用适量水将白糖熬化,倒入花生、辣椒粉、盐迅速搅拌半分钟左右离火。继续搅拌至花生均匀的沾上糖汁,滴入适量白醋,继续搅拌均匀,待凉即可食用。超好吃的说,最少我这个酷爱吃花生的人是这么认为的。就象国内卖的怪味花生,味道几乎一样。花生虽然热量比较高,但是可以减少下半身脂肪,所以多吃一点无所谓。最少我吃得很多的,不见胖。

自制素火腿:

很惭愧,这次的素火腿不能算成功,首先我无论如何都没办法把它扎成火腿的形状;其次,捆的还是不够紧,头尾部有点松散;再者,豆腐皮浸泡的时间不够长,不够入味。下次一定吸取教训,做得更好!不过还是把方子贴上来,因为严格来说,这次纯粹是我操作失误,方子还是很好的。

做法:新鲜豆腐皮一包约300g 用一杯水兑一大勺老抽一大勺生抽三小勺糖一点麻油的比例调好。将豆腐皮剪成小块放入料汁。充分浸透,要保证每张皮子都浸到汁。待汤汁几乎被完全吸收,用纱布将豆腐皮包紧,一定要很紧,不然会散开。大火蒸10分钟后转中火再蒸30分钟。关火后,不要急着取出,继续放在蒸架里至完全放凉。拆开纱布切片装盘就可以了。一点心得:一定要等腐皮卷完全凉透才能拿出来切片,不然的话也会散架的。喜欢吃豆制品的朋友可以试试。味道很不错,而且因为不用油炸方便又健康!

葱油胡萝卜土豆泥:

也是个超级简单的菜式,营养和味道却是很好。土豆(选红皮的比较好)、胡萝卜去皮切小丁后放入有盖容器,放微波炉叮十分钟左右至土豆全熟。捣成泥,加盐调味,加入牛奶(为了使土豆泥更湿润,不妨的话会很干)、葱油(我家有现成的,没有的话就用油爆香葱花。一定要把葱熬到黑,这样的葱油才会香)拌匀即可。简单吧!
