Recipe for
Ingredients
- 2 bags of Chinese fresh noodles (the brand we use is “Twin Marquis – plain noodle (thin)”) – can be substituted with spaghetti
- 1 cup soy sauce
- ¼ cup black vinegar
- 1 tablespoon sugar
- 1 tablespoon white sesame seeds
- ½ clove of garlic – crushed
- ½ oz. minced ginger
- black pepper and Chinese wild pepper
- 4 stalks of green scallion
- vegetable oil
- chili oil or 1 tablespoon of crashed chill paper and 5-10 pieces of hot chili pepper (Important but optional)
Directions:
- Put the noodles in the boiling water. When the water begins to boil again, set timer for 5 minute. (12 minutes for spaghetti)
- Quickly take the noodles out from boiling water. Cool the noodles in a large backing tray or on a turn table by high speed fan. Add about 1-2 oz. vegetable oil to prevent the noodles sticking together. For spaghetti, oil may not be necessary. Do not use cold water to chill the noodles.
- Place ½ clove of crushed garlic, ½ oz. minced ginger, chopped green scallion, 1/8 tablespoon of Chinese wild pepper, sprinkle black pepper all into a heat-able bowl.
- Heat up 1 oz. vegetable oil in a flying pan. After the oil become hot, add 5-10 piece of chili peppers into the oil and pour the oil immidiately into the heat-able bowl with all the ingredients.
- Make chill oil (optional): Heat up 1 oz. vegetable oil in a flying pan. While the oil is heating, add in 1-3 star spicy (brown colored with 8 points). After the oil become mdium hot, pour it onto 1 tablespoon of crashed dry chili pepper (in a heat-able bowl). Mix carefully until chill paper become dark red.
- Put 1 tablespoon white sesame seeds into the flying pan. Use the leftover heat to bake the sesame until light yellow. Do not over bake.
- Mix the ingredients in the oil and add in 1 cup soy sauce, ¼ cup black vinegar, 1 tablespoon sugar, and sesame seeds.
- Cut the green scallion to 2 inch pieces. Slice the scallion pieces (parallel) to fine strains.
- Put the noodles in a large bowl. Gather the green scallion, sesame seeds and other cooled ingredients onto the noodles, mix well right before use.
