Cool Gazpacho

1. 2.25 cups peeled coarsely chopped tomato. 
2. 1.5 cups no-salt-added tomato juice. 
3. 3/4 cup peeled, seeded, and diced cucumber.
4. 3 tablespoons chopped fresh parsley. 
5. 2tbsp chopped onion.
6. 1 tbsp balsamic vinegar.
7.1 small clove garlic, minced.
8.1/2 tsp minced jalapeno pepper.
9. 1/8 tsp salt.
9. 1/8 tsp coarsely grounded pepper.
10. sliced green onions (optional)


Combine first 11 ingredients in the container of an electric blender, top with cover, process until mixture is chunky.
Pour tomato mixture into a medium bowl, cover and chill mixture thoroughly.
