鲫鱼烧豆腐

第一次在超市鱼缸看到游水鲫鱼,肥壮生猛,带了两条回家烧豆腐。。。

材料 : 活鲫鱼(打理干净,肉厚处划两刀),嫩豆腐切粗丁,葱段,姜片,干辣椒。

调味料 : (1)辣豆瓣酱,(2)醋,生抽,老抽,冰糖,料酒,麻油,清水半饭碗。

做法 : 半饭碗油烧热,放进葱段,姜片,辣椒煸至变色,香气溢出,捞起备用; 将鲫鱼放进余油里煎至表皮酥脆,捞起备用; 倒掉炸油,一大匙清油,一大匙麻油烧热,加入辣豆瓣酱翻炒片刻,放回葱段,姜片,辣椒,摆上鲫鱼,加入所有调味料(2),烧开后上盖,转小火焖煮20分钟,放进豆腐继续煮5分钟即可。

新鲜鲫鱼肉质细嫩,味道鲜美,但细小刺较多,所以先炸过再加醋烧煮,吃起来方便多了。
