烹饪课后的练习(week of 11/28/2016)
Serve this family-friendly salmon loaf with broccoli or green peas and your favorite chutney.
Ingredients:
1 can(213g) No salt added sockeye salmon, drained
3/4 cup cold mashed potatoes
1/4 cup finely chopped red onion
2 large eggs
1 tbsp ground PC seafood seasoning
1 tbsp PC 100% pure safflower oil (我用的是vegetable oil)
2 tsp finely grated lemon rind
Directions:
1. Preheat oven to 375℉. Spray 8 x 4 inch loaf pan with cooking spray, and line with parchment paper.
2. Mash salmon well in a large bowl using a fork. Add mashed potatoes, onion, eggs. seafood seasoning, oil and lemon rind. Mix well.
3. Spoon into prepared loaf pan and smooth top.
4. Bake 30 minutes or until lightly golden on top and bubbling at edges. Invert onto the cutting board. Cut into eight slices to serve.
