莲花酥做法:


水油皮:面粉2杯(我用的中筋)过筛,1/2杯水,3.5~4大匙油和成水油皮.

如觉面硬,要加水或油和到软,水油皮一定要软。要醒面1小时以上。

油面:面粉1.5杯上屉蒸熟(大约8分钟)过筛,加7~8大匙油和成油面.

做法:取一半用水油皮,包上一半油面,擀成大片

三折,再擀成大片,如此4次,

最后再擀成大片,切成小方块

刷上蛋液(一个蛋黄加一大匙水)

如包包子一样,包上豆沙馅,翻过来,再用刀切成如图这样,上油锅中火炸

再来看海棠酥的做法:

取剩下的一半水油皮包上油面,擀成大片,三折,再擀成长长的薄片,卷起

切成小块

取一块擀成圆皮,要平擀,让皮的厚度平均,刷蛋液

包上芋泥,捏出四角,在每个角下剪两下,如图

将第一剪的皮向中间扣,按紧,下油锅中火炸

回复 '风中小雨' 的评论 : 也是可以的,但是烤箱出来的成品效果比较差,尤其是莲花酥只会打开一点点,不会全部放开。
