Home Made Liang Fen (自制凉粉)

Liang Fen is a popular Chinese appetizer. It is made of green bean starch, water and your favorite sauce. To make it at home, I use 1/2 cup of green bean starch, 3 cups of water, mix well, use medium high heat to cook it till boiling (stir constantly to avoid scorch). Cool in refrigerator for 3 hours. Then slice it into small pieces and pour on the sauce.

For sauce, I like to use:
1 teaspoon sugar
1 tablespoon rice vinegar
2 tablespoons soy sauce
2 tablespoons sesame oil
1 - 2 tablespoons chili oil
Some Chinese preserved vegetable (榨菜), chopped
1 teaspoon Sichuan peppercorns (花椒)
