意大利柠檬煎鸡排- Chicken Piccata

给大家来个美味,简单,实惠的意菜,

材料:

6片鸡脯肉
大蒜头, 红葱头, 切碎,
2个柠檬, 一个皮刨下后挤汁, 另一个切薄片,
一杯鸡汤,
一杯白酒,
2 TB Caper (酸花蕾)
2TB 黄油,
Parsley, 切碎,

准备三个盘, 一盘放面粉1/2杯, 一盘放两个蛋打散, 一盘放有意大利调味料的面包削1杯,

鸡脯肉, 把筋, 油去掉, 把里脊肉取下(下次做菜用,太厚), 用腊纸隔开, 拍薄, 撒上盐,胡椒粉,

锅里放一点canola 油, 把底部抹匀, 烧热, 鸡脯肉, 粘面粉, 再裹蛋液, 最后再拍上面包削, 进热锅两面煎金黄, 去出, 保温,

同锅里, 加一点黄油, 放大蒜头, 红葱头,炒软, 加酒, 把锅底刮干净, 加鸡汤, 1半的柠檬片和柠檬皮, 慢火收汁到只剩一半, 取出柠檬片和柠檬皮不要, 加柠檬汁, caper, 加热后关火, 加黄油搅拌溶化, 再加parsley, 把酱倒在鸡排上, 把剩的一半柠檬片放在鸡上, 好了.

盘底放上 arugula 和 红洋葱丝, 再放鸡块, 浇上酱汁, 围上番茄, 再配个parsley拌的土豆泥, 就是一餐了. Arugula 也粘上酱汁, 又让热鸡温了一下,特好吃.

我们家一般是小孩喝牛奶, 大人喝红酒, 也不是什么高级酒, 也不董酒, 觉得顺口就好, 当健康饮料喝, 稍微增加一点气纷, 今天开了白酒, 就喝白酒, 这瓶酒还挺顺的, 不错.

Chicken should go with white wine. In short, white meat goes with white wine, red meat goes with red wine.
