辣椒炒鸡丁,
鸡腿肉用酒,酱油,糖,胡椒,淀粉拌过, 热油锅里,滑炒断生,取出.
炒香蒜末, 下辣椒炒软, 鸡肉回锅, 加酒, 素耗油,拌炒匀,好了.

这盘加了豆鼓的,

醸豆腐,
绞肉用酒, 酱油, 糖, 胡椒, 蛋白, 葱,姜末, 淀粉,香油,鸡粉, 和挖出的豆腐, 拌过, 添入抹了太白粉的豆腐窝洞里, 摸平, 馅面抹上蛋液, 粘上淀粉, 进油锅两面煎金黄, 加鸡汤,酒, 毛豆, 耗油, 煮几分钟, 勾欠, 淋点香油,好了.

肉丸炒黄菜花,
第一次看到黄的菜花,

用醸豆腐剩的肉做的肉丸子,粘上蛋液, 滚上淀粉, 锅里煎金黄, 加鸡汤,跟黄的花菜,鲍菇丁,虾米一起煮软, 放一点盐,糖, 胡椒,勾欠.

耗油芥蓝,

三杯鲶鱼,
活鲶鱼,切段, 用开水烫过,冷水冲洗净白黏沫, 备用,
锅里热油爆炒香, 蒜,姜,红葱头, 辣椒, 下鱼块, 略煎, 加酒, 酱油, 冰糖, 一点鸡汤烧入味,
砂锅到入两汤勺麻油烧热, 把鱼倒入, 撒入一大把九层塔叶, 盖好盖焖两分钟, 上桌.

鸡丝炒豆芽
鸡脯肉切细丝用盐,酒,糖,白胡椒抓过进油过炒断生取出,
热锅用油炒姜丝, 葱 , 加黄豆芽, 炒软, 到入鸡丝,喷酒,加点鸡粉,淋香油,出锅.

什锦砂锅汤,
有大狮子头, 烤鸭, 萝卜, 白菜, 海带芽, 粉丝. 鸡汤.
大狮子头是用绞肉, 蛋白, 淀粉, 马蹄, 葱花, 姜末, 盐, 酒, 鸡粉, 白胡椒,豆腐, 香油, 打上劲, 做成大丸子, 下到开水里的, 做了好多, 冻起一些来,下次可用来红烧, 炖菜, 等用.

咖哩豆腐煲,
肉末用洋葱丝, 蒜炒过, 加鸡汤烧滚, 放日式咖哩块, 和嫩豆腐煮滚,好了.

红糟烤肉,
梅花肉切大片用红糟,绍酒,胡椒,五香粉, 蒜泥,糖多一点,盐,腌过夜, 放在有烤架的烤盘里, 进350F烤箱烤30钟, 中间要翻面, 刷上泰甜辣椒酱,再用375F烤15分钟, 就好了.

红白萝卜排骨汤,
排骨川水后, 加水, 姜片, 慢火炖烂,加红白萝卜,再炖软, 撒香菜, 放盐, ,就好了.

答应过要慢慢来秀我的锅的, 再给大家看看我比较得意的中式炒菜锅吧,
我用的较多的专门用来做中式快炒的锅:
16"生铁锅, 用了好几年了, 几乎不粘, 炒年糕,米粉,和面条,如不加很多油的话就会粘, 我就用Swiss Diamond non-stick wok来炒.
一定要用gas 炉子,要火大, 小火炉子要用铸铁的, Le Creuset or Lodge wok 都很好.
