(Seafood Phyllo Cups)

这道餐前小食简单美味,色泽靓丽。松脆的酥皮杯,配上味道浓郁的腌三文鱼和海鲜色拉,开胃好吃,而形状则像极了一朵朵盛开的鲜花。非常适合做派对小食。

材料:
酥皮纸 (phyllo dough) 2张,每张尺寸为46 X 31cm ,室温解冻
无盐牛油 (butter) 50g,微波炉中火叮半分钟至融化
腌三文鱼(smoked salmon) 6片约120g,切成2x10cm的条
熟虾仁 (cooked shrimp) 250g,切成麻将色子大小的粒

调料:
奶油芝士 (cream cheese) 80g,室温软化
美奶兹(mayonnaise) 2大匙 (tbsp)
酸奶油 (sour cream) 2大匙(tbsp)
洋葱 (onion) 1/2个,切细粒
续随子 (capers) 30粒约15g,切细粒
盐 (salt) 少许

做法:
1) 烤箱预热350F;
2) 所有调料放在搅拌机(food processor)里,搅成色拉酱(图A),拌入虾粒成虾仁色拉(图B)
3) 酥皮纸摊开,在其中1半的表面刷一层薄薄的牛油。盖上另1半,表面再刷一层牛油(图C);
3) 用模子压成直径约为7.8cm左右的圆片,1张酥皮纸可压成约11个(图D)。放入迷你蛋糕烤模,整理成中空的杯形(图E);
4) 入烤箱350F烤5分钟,至金黄酥脆,取出放凉(图F);
6) 把腌三文鱼条沿酥皮杯内侧铺一圈(图G),杯内填入1大匙虾仁色拉,放上点缀(图H)。

贴士:
a) 可以把各种海鲜如鲜贝(scallop),龙虾或蟹肉等,煮熟切粒后拌入色拉;
b) 酥皮纸拆开后,要用保鲜膜盖好,上面再盖一张湿的厨纸。否则很容易干裂变脆;
c) 如果买不到酥皮纸(phyllo sheet),可以用很薄的小馄饨皮代替。在一张小馄饨皮上,刷一层牛油,放入烤模。烤箱350F烤5-6分钟至皮酥脆即可。
