免揉斯佩尔特面包&韩国豆腐煲
免揉斯佩尔特面包 - Whole Spelt Sourdough bread:
看私房的鹦鹉哥做健康食品和免揉面包很来劲的, 我也来分享一下我做的免揉健康面包, 其实我也一直在鼓捣我的面包, 怕大家看烦了, 就没敢贴出来. 做过好多次免揉面包, 以前也上过, 是省事, 但口感没特别优越, 就没着重去介绍给大家.
我是看这个网络学做的, 后来我做Peter Reinhart的Hearth面包, 也免去了用 steam那一步骤, 而是采用了免揉面包里用的陶瓷(clay)和铸铁锅(cast iron)来创造个小的密封高温烤箱来保留住水份和温度的, 觉得效果很好.

材料:
530 grams (about 5 cups well fluffed up) whole spelt flour, 斯佩尔特面粉
350 grams (~1+1/2 cups) water
10 grams (1+1/2 tsp) salt, 盐
3 Tbs honey or sugar or 2 Tbs agave, 我用了3TB maple syrup, 枫糖浆,
1/4 cup sourdough starter, 酵面种 (wild yeast, biga, poolish, pate fermentee, 我都用它,我一直养着的)
Follow the instructions in the video.
Bake at 450 for 45 minutes or until internal temp is 195-200F.
我是前一天晚上9点拌好的料, 放室内第二天下午4点 拿出来, 18个小时第一次发酵, 拿出来后把面团来回折叠几次, 整型, 在案板上把封口面放底下大约10分钟后,把面团放入发面篮子里, 面团比较软,我用了一个大铲来搬动它,
再醒面1小时, 面团发到1.5 倍大时, 进预热到450F烤箱里的瓦盆里, 盖上盖, 烤35分钟, 拿掉盖再烤10分钟, 内部温度195-200F. 拿出烤箱放架上冷却后切片享用.

LG帮忙, 叫他示范面包可 bendable, 他给我拉断啦, 白费力. 不过里面真的很绵软, 外面又非常香脆.

儿子第二天问我这面包是否加了laxative, 差点把我笑死啦.
做了个韩国豆腐煲吃, 用里面的汤粘面包吃很不错哦.
韩国豆腐煲—
大里脊肉切薄片,
蒜末, 葱头片,
韩国泡菜
韩国黄豆酱,
韩国辣椒面酱,
鸡汤 (有牛肉汤更棒)
柴鱼高汤粉( hon-dashi stock)
西葫芦片,
藕片,
乌冬面,
鲍鱼菇,
黄豆芽,
蒟蒻丝,
豆腐,
青葱段
用麻油将蒜末, 葱头片炒香, 放韩国泡菜炒香,加韩国辣面酱, 韩国黄豆酱, 炒香, 放肉片炒断生, 放鸡汤, 水, 和柴鱼高汤粉, 烧开, 放西葫芦片,藕片, 乌冬面, 鲍鱼菇, 黄豆芽, 蒟蒻丝, 烧滚, 放豆腐, 青葱段, 再烧滚, 端锅上桌吃,
