- Vegan Banana Carrot Muffin
- No egg, no added oil, no dairy.
- Ingredients:
- 1 c whole wheat flour
- 1/2 c rolled oats
- 1 carrot, shredded
- 2 ripe bananas, mashed
- 1 tsp baking soda
- 2 tsp baking powder
- 2 tsp vanilla extract
- 1/4 pure maple syrup
- 2 tbsp non-dairy milk (almond milk)
- 2 tbsp smooth peanut butter
- 1/4 c water
- 1/4 c chopped nuts (optional)
- Directions:
- 1. Preheat oven to 350 degrees. Line muffin tin with paper cups.
- 2. In a mixing bowl, whisk flour, oats, baking soda, and baking powder together.
- 3. In anthoer bowl, mash bananas, mix well with peanut butter. Add vanilla extract, maple syrup, non-dairy milk and water, stir.
- 4. Add the flour mixture and stir well until there are no lumps. Add shredded carrot, and nuts if using. Stir until blended.
- 5. Spoon into muffin pan and bake 18-20 minutes.
