简单烤香蕉胡萝卜玛芬

  • Vegan Banana Carrot Muffin
  • No egg, no added oil, no dairy.
每次家里有很熟的香蕉时, 就琢磨着烤些点心. 所有的材料都是家里常备的. 明天中午饭就是 Salad and Muffin.



  • Ingredients:
  • 1 c whole wheat flour
  • 1/2 c rolled oats
  • 1 carrot, shredded
  • 2 ripe bananas, mashed
  • 1 tsp baking soda
  • 2 tsp baking powder
  • 2 tsp vanilla extract
  • 1/4 pure maple syrup
  • 2 tbsp non-dairy milk (almond milk)
  • 2 tbsp smooth peanut butter
  • 1/4 c water
  • 1/4 c chopped nuts (optional)
  •  
  • Directions:
  • 1. Preheat oven to 350 degrees. Line muffin tin with paper cups.
  • 2. In a mixing bowl, whisk flour, oats, baking soda, and baking powder together.
  • 3. In anthoer bowl, mash bananas, mix well with peanut butter. Add vanilla extract, maple syrup, non-dairy milk and water, stir.
  • 4. Add the flour mixture and stir well until there are no lumps. Add shredded carrot, and nuts if using. Stir until blended.
  • 5. Spoon into muffin pan and bake 18-20 minutes.
