马德林蛋糕

馬德林蛋糕的口感超吸引,鬆軟可口,味道香又甜。外形非常誘人。

马德林Madeleines

材料:



低筋粉(cake flour)100克

泡打粉(baking powder)½茶匙

鹽 ¼茶匙

雞蛋 2隻

雲呢拿香精(vanilla extract)¼茶匙


檸檬皮蓉(只磨出黃色部分)1個

幼砂糖 70克

無鹽牛油(先行融解,放涼至室溫) 80克 + 少許塗焗盤用

糖霜(裝飾用,或可不加)酌量

作法:


在焗盤上塗上薄薄一層融解牛油。灑上低筋粉。搖去多餘的麵粉。放入雪櫃(fridge)中,備用。

把低筋粉,泡打粉和鹽過篩拌勻,備用。

雞蛋置一大盤中,用電動搞拌器低速打發至起泡。加入雲呢拿香精和檸檬皮蓉,拌勻。轉用高速度繼續打發雞蛋,逐少加入糖,打發至發白和蓬鬆,拿起搞拌器,流下的蛋液可以寫出條紋,約5分鐘。

分三次篩入麵粉混合物,輕手拌勻,見沒粉粒即可。切勿過度搞拌。

拿出小部分麵糊,與融解的牛油拌勻。然後把牛油混合物從麵糊的盤邊加入。輕手拌勻。用保鮮膜蓋好,放入雪櫃(fridge)中,冷藏1小時。麵糊轉稠。


預熱焗爐至180C / 356F. 焗架置上半層。

拿出焗盤和麵糊,用雪糕匙或大匙羹,小心地把麵糊置入每個盤孔中,約3/4滿(不用撥平表面)。放入焗爐中,焗約 9分鐘。見邊緣轉金黃,用手指按壓中央,感覺回彈,即成。拿出脫模,放置在鐵架上放涼些,就可享用。或完全放涼。灑少許糖霜在上面裝飾。
