Monkey-head Mushroom and Fish Maw Soup

INGREDIENTS:

Monkey-head mushroom (hericium) 猴頭菇 - 20gm
Fish Maw 花膠 - 40gmSolomon'sSeal 玉竹 - 20gmAstragalus (huang qi) 黃耆 - 20gmChinese yam (shan yao) 淮山 - 20gmChinese wolfberry (gou ji zi) 枸杞子 - 20gmLily / Bulbus Lilii (bai he) 百合 - 20gmLongan Fruit (long yan rou) 龍眼肉 -10gmCitrus peel 陳皮- one small piece (pre-soaked and with white tissue removed)
Lean pork - 600 gm or one chicken (skinned and cut into 4 pieces)
Ginger - 5 pieces
1. Soak fish maw over night or until soft, cut into large pieces.
2. Soak mushroom for about 30 minutes. Rinse until water being squeezed out is clear.
3. Rinse pork and cut into a few big pieces. For chicken, cut into quarters, remove skin and obvious fat.
4. Put fish maw, 2 slices of ginger, pork/chicken in boiling water to cook for 5 minutes, retrieve and rinse.
5. Soak other ingredients for 20 minutes and rinse.6. Put all ingredients in a soup pot with about 3 liters of water. Bring to a boil, remove foam and reduce heat to simmer for 3 hours. Add salt to serve.
