茄子肉饼,茄夹子,糖酥饼,葫芦面包

还记得我的月饼的人都知道我下厨的鸟菜水平,这倒使我没了顾虑,斗胆到私房上菜。

绞尽脑汁想做菜主要是菜园丰收,西红柿做了西红柿酱,冷冻西红柿。茄子凉了干菜,冰箱还是装不下。烧茄子再好,吃了近两个疗程后也没了热情。我改做一下,效果还行。

茄子肉饼

材料:茄子,青椒,猪肉
调料:酱油,葱,蒜,料酒

做法:
1)茄子切去老根后,切成滚块;

2)猪肉用料酒,盐拌好,起油锅,把猪肉翻炒熟

3)锅里热油,将茄子倒入,翻炒均匀,改小火,用铲子出挤压茄子中水分。10分钟后,倒入葱蒜,翻炒后盛入盘中。晾凉。

4)用发面做成小份,擀成小饼,放入烧好的茄子,加少许cheese,封口。

5)在锅中用中小火烙熟。

发面饼吃起来会更忪软一些。

茄夹子

做法:

1)将胡萝卜,葱,韭菜,猪肉馅,酱油,料酒,油,姜,花椒粉 拌好肉馅;

2)茄子切去老根后,切成半寸厚的片,中间切开,放入肉馅;

3)放入面粉和鸡蛋,水调好的面糊糊里,沾均匀

4)锅里热油,将沾好面糊的茄夹子放入锅中,用中小火烙熟。

糖酥饼

材料:面粉,白糖,油,Yeast

两碗面加半茶勺发粉,用温水和成稍软的面团,分成几个面剂子,擀开加一大勺糖粉(糖和面粉混合),像包包子似的包好,捏紧,擀成小饼状就可烙了.

做法:

1)用温水和成稍软的面团,加少许油。

2)将和好半发的面擀成大饼,撒上一层面粉。再切成小块,里面包入一半糖,一半面粉的糖面。

3)锅里热油,将包好的小饼用中小火烙熟。

葫芦面包 (Zucchini Bread)

最早看到这个食谱是一个朋友1996年送的email,现原封不动照抄。

3 eggs (sligtly beaten)

1 cup oil

2 cups suger (我用1.5 cups,不然太甜)

2 1/2 cups grated zucchini squash (or chop fine) 

2 teaspoons vanilla

2 cups flour

2 teaspoons baking soda

1 teaspoon salt

1/4 teaspoon baking powder

1 cup chopped walnuts

1 cup raisins 

Add all of the above ingredients in the order given.  Bake at 375 F about 1 hour.  Make 2 loaves.
