今天原想做个生鱼片粥,而家人带回来的却是己泡过水与冻藏过的龙利鱼肉,经过我多次用纸逼水,总觉得鱼肉还是太散不够结实,煮粥肉会爛也有鱼腥味,只好勉为其难的弄个菜远滑鱼片来下饭,但这次做得实在是差,还请大家多多指教,谢谢!
材料:龙利鱼肉,油菜,草菇,红萝卜,鸡蛋,生粉,糖,盐,味精,料酒,高汤,茨水.
制作:鱼肉切片用糖,盐,味精,料酒,蛋白与生粉抓匀后放入冰箱醃半小时,放入七成热油锅中滑熟,再倒出沥干油备用,油菜洗凈切段过水备用,草菇过水备用,红萝卜切片过水备用.热油锅爆香蒜片后,下油菜,草菇,红萝卜一起大火炒香,放些高汤滚后再放糖,盐,味精调味,勾茨再回锅滑过的鱼肉再炒匀,再放半匙明油拌匀即可出菜
