记芳肉饼屋

 

肉饼实际上就是用肉馅当葱花的 “葱花烙饼”。

 

面的软硬,好像各家也不同,各有各的偏好。肉馅的口味也家家不同。

 

用低胫的面可能会好。面和的软点儿,两杯面,一杯水,把水一次全倒入面里,不用手,用一个结实的不锈钢勺子,搅拌,很快就拌匀了,然后放在那儿,让它自己醒一醒。

 

把牛肉馅,葱,姜,酱油,盐,扮好,铺在面上,像个Pizza,加菜油,让各处都沾上油。

我把卷切成三段,封好头。

桿开,用手把面上打点油,开始烤。要用小火。铁板上不放油,有放在饼上。家里就没有油烟。
