虾蛋炒饭这个家常菜人人试过,但加了虾米与菜脯就很少有人尝过,我利用油爆虾米增潻鲜味,菜脯脆甜的口感与甜味,使这道家常炒饭变得很不家常.
材料:虾米一把,虾仁一磅,甜菜脯五条,蛋两个,葱两支,蒜四瓣,隔夜冷饭两碗半,盐,糖,味精.
制作:虾米泡温水软后沥干,虾仁泡生粉水十五分钟洗凈,菜脯切成小粒,蒜片,葱花,蛋打散备用.热锅放四分之一匙油,爆香三分一的蒜片后,下虾米与菜脯粒炒香即可捞出备用.再下匙半油热锅后爆香余下的蒜片,把散蛋倒进锅内即快炒,大约七,八成熟后即把冷饭倒进再大火不停的快炒十分钟(中间用鏟子不断的压压饭贴锅,使饭能吸收镬气与干身),再放虾仁快炒后即可回锅虾米与菜脯粒再压几下锅再炒,放盐,糖与味精调味下葱花再炒片刻即可装盘出菜.
