这一道经典小吃可说是我的喜好之一,它包含着三种不冈烹饪的成品滙聚在一起的菜式,功夫虽然多但是非常值得,当然也可以挑选自己喜欢的食材分开来做,又香又便宜又好吃的碎米饭是越南最受欢迎与普遍的小吃之一,五花八门的碎米飯应有尽有,久而久之也演变成了越南菜肴中的精华之一…..
材料:碎米,肉排,魚露,猪肉,猪皮丝,炒碎米粉,蛋,粉丝,木耳,葱花,生菜,萝卜,紅箩卜,黃瓜.
制法:碎米煮成飯 (干点最合適).
粉丝蒸蛋:粉丝泡温水后切段,木耳泡温水后切成丝,猪肉垛成茸,蛋打散(留起二个蛋黄后用),大碗放粉丝段,猪肉茸再加盐,糖,胡椒,味精拌匀.大火蒸十五分钟后再把二个蛋黄弄散于蒸蛋之表面再入预热300度的烤箱烤十分钟即成.

猪皮肉丝:猪肉放进滚水煮熟后过水切丝再拌碎炒米粉,猪皮丝(切段),加盐,糖,味精备用.

猪肉排:腌碎香茅,蒜粉,糖,魚露,酒,味精四小時后再中火烤熟.

爆葱油:热油锅再香爆葱花. 魚露:魚露,糖,水,柠檬,辣椒伴成.
碎米飯制法:碟子先盛些碎米飯,放些葱油,一些猪肉皮丝,一块蒸蛋,一块烤肉排,生菜片,紅,白萝卜絲,黃瓜片,鱼露即可出菜开吃.
