来点夏日清凉消暑的:


泰式牛排沙拉-

夏天常做这个甜酸辣酱, 开胃爽口, 自己做可以掌握 它的咸度,甜度,辣度,酸度, 多做点可以用好几次, 可以拌粉, 面, 粉丝, 黄瓜, 圆白菜, 鱿鱼, 虾, 鸡丝, 碎肉末...


甜酸辣酱:

½ 杯青柠檬汁,
½ 杯鱼露,
1 杯水,
1/4 杯糖,
蒜, 随便,
辣椒, 随便,

1/4洋葱, 1/4番茄切末.

用石锺子来碾大蒜和辣椒,味道更纯.


牛肉腌料:

牛排,Flap steak, 腌过夜, BBQ炉上一面烤4-5分钟, 醒5-8分种,切薄片,

6 TB鱼露,
2TB 甜酱油,
1个柠檬汁,
2TB 菜油,
1 tsp 辣椒粉( cayenne ),
1tsp 胡椒粉,
3 TB糖,
½ tsp盐,

粉丝开水泡5分种, 取出, 冲冷水,

生菜切碎, 洋葱切丝, 番茄切小片,

薄荷叶/九层塔叶,切丝,

盘底垫生菜, 放粉丝, 洋葱丝, 番茄, 薄荷叶/九层塔叶, 牛肉片, 淋酱汁, 洒碎花生米.

日式荞麦面和铁板烧鸡,

3个去骨, 去皮鸡腿, 用腌鸡料腌过夜, 擦干后, 两面干煎熟, 做成串烧鸡也很棒.

腌鸡料:

4TB 米酒, sake
5TB 酱油,
2TB 咪淋,mirin
1TB 糖,

荞麦面开水煮熟, 泡冰水, 沥干, 散开放在筛盘里,

吃时, 沾上用柴鱼汁调的酱, 葱花, 紫菜丝, 白萝卜泥, 和三葵酱,

我用了买的沾面汁,

自做soba noodle dipping sauce:

煮出汁,1杯, 柴鱼削和海带煮出来的汁, 可用Hondashi, 亨大师粉加水来做.
咪淋, mirin, 1/4 杯,
低盐淡色酱油,1/4 杯,


配了个萝卜酱汤,

做了两次抹茶冰激淋, Green Tea Ice Cream, 用不同的方子和做法, 效果不同, 看你喜欢什么, 我都来介绍一下:

Method I:

2 ½ C half & half
2/3 C powder sugar, 糖粉,
2 tsp 香草精, vanilla extract
1TB 抹茶粉,

把全部材料用 blender 打匀, 倒入 ice cream machine, 搅30分种, 进冻箱2小时,就可用了.

很简单, 很容易做. 味道很好, 口感像冰沙 (sorbet), 不是特别棉滑, 奶油味不大, 但很爽口, 茶味很甘清, 儿子说更好吃.


Method II:

1 C half & half
2 蛋黄,
6 TB 白糖,
1 tsp 香草精.
¼ tsp 盐,

3 TB 热水,
1 TB 抹茶粉,

1 c 鲜奶油, whipping cream, whipped

- 抹茶加热水拌匀,

- whipping cream 隔冰水打发,

- 把 糖, 蛋黄and half & half 放在一小heavy sauce pan and 小火慢慢加热, 同时不停的搅拌, 温度到180F 或木勺背面能挂上糊就好了, 连锅一起泡在冰水里待凉, 加入盐和抹茶水, 拌匀. 这时可以过筛, 去掉颗粒, 我偷懒啦.

把打发的鲜奶油和蛋糊混匀, 倒入ice cream maker 搅拌 25-30 minutes.

奶香味浓, 口感很滑糯, 纯雪糕的味, 茶味没有上面那个明显, 我更爱这个, 儿子觉得腻了点.


当心, 别太晚吃它, 我就吃了半夜睡不着觉.


还有, 我看到书上一个更简单的方法, 就是把买来的香草冰激淋, 略解冻, 拌入抹茶粉, 再冻起来.

half & half 就是一半cream, 一半牛奶, 但还是很少的奶油(milk fat), 吃起来没有很重的奶油口感和味道, 有的人会更喜欢. 我个人爱吃 rich and creamy 的那种.
