材料:冰過的米(在私房學的), 咸豬骨,皮蛋
煮滾水,下冰過的米, 咸豬骨,煮至糊下皮蛋再煮15分鐘即成.

材料: 米粉,叉燒,蝦仁,椰菜,甜椒或辣椒,雞蛋,咖哩粉,雞粉,鹽
米粉用熱水燙軟,雞蛋打過煎香切絲,熱鍋下油,爆香咖哩粉,下米粉炒勻,下鹽炒勻,在另一個鍋,炒好叉燒,蝦仁,椰菜,甜椒,下雞粉,鹽調味,把炒好的米粉菜混合調味即成.

京都吃怀石料理


有人問我科普一下怀石料理,我也不知道什么是真正的懷石料理,所以才去試,看看懷石料理的真面目.

• 大妈能不能解释一下啥叫怀石料理? -ciccina- ♀

我知道怀石料理的来历,也知道它是一种高档日餐,选材精良、制作精致、餐具古朴,可到底啥叫怀石料理,我在日本住了两年也一直没搞明白。比如大妈做的这些东西,这么多样要做出来当然是很费功夫,不过好像和我在日本饭店吃的也差不多啊。难道怀石料理就是分量格外小一点,presentation更空灵一点?

之所以想问因为我日本老板告诉我怀石料理和一般的会席料理完全是两种不同的东西,怀石料理一般日本人根本吃不起的。但问他们到底咋样,好像也说不出个道道。大妈是不是研究过什么书的?可以给我们科普一下。


我們去這家懷石料理是2 start Michelin, 要預定,二天前就請酒店員工幫我們定下了.
這家怀石料理,有三個價的,如:大,中,小.我也不知道是什么意思,(好像電話order時已問了,我順口就說要大的).

有人也去世博会吃了怀石料理.
