1 cup self-rising cornmeal mix
1 egg
3/4 cup buttermilk
1/2 cup grated cheddar cheese
1/2 cup diced ham
1/4 cup finely chopped onion
Grease shallow skillet/lid or griddle. Place on burner and heat on medium until a few drops of water dance across surface and quickly disappear. Meanwhile, mix slightly beaten egg with buttermilk and add to cornmeal, mixing with fork or spoon. Stir in cheese, ham, and onion. Pour about 1/4 cup onto preheat griddle. Cook on one side, turning when bubbles appear across surface, and cook on the other side. Corncake should be golden brownon both sides. Continue until the batter is used, lightly re-greasing griddle between batches. Do not allow griddle to become cool, as it will result in sticking.
