《X.O爆鱼腩》






材料:鱼腩斜刀切成片醃三匙蛋清,一匙生粉,两匙油,糖,盐,味精等调味大约半至一小时,中国芥兰去硬梗去厚皮再切成斜段,红萝卜切成片.

做法:起鍋滚水,先氽芥兰与萝卜片再过冰水备用.热油鍋先煎鱼腩片大约两分钟翻面后再煎大约两分钟捞出备用,再热油鍋爆香蒜片,下X.O酱爆香后,放入芥兰与萝卜片快炒,赞料酒,加糖,盐,味精等调味再倒入高汤滚至干汁,再回鍋鱼片炒匀,淋些明油即可装盘出菜.
