Lactic acid gets built up in the muscles because working muscles during intense exercise will require higher energy production than oxygen in the blood can deliver.
To obtain energy, the body breaks down glucose into something called pyruvate, which is metabolized aerobically and used for energy. When oxygen gets in less and less supply, especially during a hard workout, the body is forced to convert pyruvate into lactate, which can also be used as an energy source, but has side effects, such as acidity, which leads to soreness.
Researchers sought to see if the l-citrulline found in watermelons could act as an effective sports drink and help speed recovery times. In the study, researchers took 7 athletes and had them cycle for 11 minutes, some given watermelon juice, and the others given basic fruit juice, containing no l-citrulline.
It was discovered that those who had the watermelon juice had almost no aches in their legs the next day, while those who did not drink it did feel soreness.
