小吃---橙皮肉桂燕麦脆饼干(另附朋友调的几款鸡尾酒)

上周六是六月六日,六六大顺的日子。朋友邀请了十六家人,到她家鸡尾酒会+卡拉OK。 主人准备了丰富的水果点心饮料茶。虽然朋友让我不需要带任何食物,我还是做了一款简单好吃的点心---橙皮肉桂燕麦脆饼干。

我用家里最大的烤盘,做24个。
材料:
2杯燕麦
3/4杯红糖(brown sugar)
3/4杯白糖
1/4杯面粉(all purpose flour)
2 茶匙肉桂粉
150克无盐黄油(unsalted butter)融化
1只鸡蛋 打散
1大匙橙皮碎

做法:
烤箱预热至180C(350F)
1 将燕麦,糖,面粉和肉桂粉放盆里混合好。
2 加黄油,鸡蛋和橙皮搅拌充分
3 烤盘铺羊皮纸(parchment paper) ,用勺子挖一满勺混合物,并用勺背按平(如果太粘,勺背沾点水),饼干之间留一定空间
4 烤10-12分钟或至金黄

Tips:
1 这是西人的食谱,糖太多,太甜, 如果烤一盘,燕麦太多,饼干有些厚,最好减少燕麦,糖和黄油的分量
2 肉桂粉可以换成姜粉(ground ginger), 香草精等(根据个人口味)或什么香料都不加也可以,因为橙皮味道已经很浓郁了。
以下我改进的橙皮燕麦脆饼干,没加任何香料,减少了糖,燕麦,黄油的量,铺得更平

1/3 杯红糖
1/3杯白糖
120 克黄油
其它都一样。只是我将饼干按得只有一层,不重叠。

最后上一款开胃芒果凉菜

最近芒果上市,很便宜,老公上周和朋友外出吃饭,吃到这款凉拌芒果,口感很好,回来如法炮制,味道的确不错,做法简单。挑稍微生硬的芒果,削皮,切丝,放点芝麻油(或橄榄油),放点越南辣椒酱,味道是:酸--甜--辣--爽口。
