Salad Ingredients:

  1. One avocado, diced
  2. 15 cherry tomatoes, halved
  3. 15 ciliegine fresh mozzarella, halved
  4. 15 basil leaves, chopped

Salad Dressing:

  1. 1tbs olive Oil
  2. 1/2tbs balsamic vinegar
  3. Salt & pepper to taste
  4. Pine nuts (optional)

Directions:

  1. In a big bowl, combine all dressing ingredients, whisk nice and smooth
  2. Add all the salad ingredients (except fresh mozzarella cheese balls) to the dressing, sprinkle with a small amount of salt & pepper, toss to combine
  3. Add cheese balls into the salad, garish with pine nuts and basil leaf
