PINEAPPLE UPSIDE DOWN CAKE 菠萝翻转蛋糕

  • butter (for greasing)
  • 2 tablespoons sugar
  • 6 slices fresh/canned pineapple in juice (plus 3 tablespoons of  rum)
  • ? cup all-purpose flour 
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • 1 stick soft butter
  • ½ cup superfine sugar
  • 2 large eggs
  • Preheat the oven to 200°C/180°C Fan/gas mark 6/400ºF. 
     
    Bake for 30 minutes, then ease a spatula around the edge of the tin, place a plate on top and turn it upside-down.
