栗之糖炒,本家常小食,世人惯食,不以为奇。然制菜之法,千奇百怪,务求至美。
蓝婆糖炒栗子之法取料极简,然食之香甜,令人难忘也。
栗大而圆者,肥美,浸以滚水,三刻后捞出。另取蓝小泉利刀一把,顺栗皮之纹理,重划至内里。十字为佳。
砂糖以温水调和,入栗子,翻滚若干次。 糖炒栗子,最倚火候。炉火烧至220摄氏度,倒入栗子,烤之。一盏茶后,翻之。 待糖色附着,关火煨之。观色入琥珀,则糖炒栗子成矣。
