芦笋牛肉和可以使牛肉炒的很嫰的方法(组图)

今天做了一道芦笋炒牛肉，用了以前抄的一个使牛肉变嫰的方子，结果炒出了我以前从没做出过的那种嫰嫰的牛肉，很想告诉大家。我知道版里的很多高手都有自己的绝招，这个就用作让象我这样的厨房新手共勉吧呵呵～～

  先将牛肉切片，切的时候要与牛肉的纹理成90度角，也就是把牛肉的纹理切断（我不太知道怎样描述，对不住了）；放糖、生抽、姜丝、酒腌制15至20分钟，这时你可以准备配菜；牛肉入锅前才能加入盐和鸡精，马上放入干淀粉抓匀，在这同时锅里放油用大火烧热；等油热后将牛肉一片一片的入锅，入锅后马上改小火，等牛肉变色后将牛肉翻面又开大火，等另一面也变色就可以盛出了。这时你可以看到锅里只有油，绝不会有从牛肉中渗出的水。然后放入配菜芦笋翻炒，加少许盐，一会儿就可以加入刚才的牛肉再炒片刻就可以了。

  这样炒出的牛肉真的很嫰，我这次的牛肉上还有一些筋，我都没有觉得有任何塞牙的感觉，非常好吃。有兴趣可以试试！
