Lentil 汤和面包: Lentil soup,hardtime soup and bread

好多姐妹发短信给我要LENTIL汤的方子,在此,感谢姐妹支持,送上我的配方。

带些肉的牛骨头或羊骨头 2-3个(花椒5粒,大料1只)
1只洋葱切小丁
2 只胡箩卜切小丁
3根芹菜切小丁
1只西红柿切大块
1-1。5LB Lentil(洗净,空干)
1大勺Olive 油
海盐和新鲜胡椒粉少许

第一步 做骨头汤
我做这种汤总是选在周末,慢锅煮骨头汤最好不过了。骨头洗净放入热水中煮开,捞出骨头洗净,慢锅中加清水,加花椒5粒,大料1只煮骨头,过夜。第2天扔掉汤上面的固体物质,骨头扔掉,瘦肉和筋可留用。骨头汤就做好了。如果姐妹们没有骨头,可用市场卖的罐装牛肉汤。不过味道差很多。

第二步 做Lentil汤
1只厚底锅加中热,加1大勺Olive 油,加洋葱丁,胡箩卜,丁芹菜丁,炒软,加入Lentil和骨头汤, 西红柿,盖好盖子,小火煮半小时,或45分钟,直到Lentil变软。加入瘦肉和筋,最后加海盐和新鲜胡椒粉调好口味。
(汤的厚度可以用加菜的多少按个人的喜好来调整。)

Yes, you are right. The meaty taste is from the soup bone. It is the key of the soup!

Aha, I found this post! Tonight my hubby cooked lentil soup. It was tasty, but... we both admitted that something was missing! even though he added some fried bacon to add meaty flavor to it. I vaguely remembered that you cooked lentil soup with O/N stewed lamb/beef bone broth and told my hubby. That really clicked. Thank you for sharing all your cooking secret with all of us in your blog.
