日式章鱼烧-


面糊:

中筋面粉, 1 ¼ 杯, 有低筋粉更好.
蛋, 2个,
水, 1 ½ 杯,
柴鱼粉, (hon-dashi), 1 tsp
盐, ½ tsp
发粉, (baking powder), 1 tsp

填料:

熟章鱼丁, (我用是韩国店买的冻的, 开水烫过后冲凉水, 再沥干)
腌姜, (sushi ginger),
葱花,
胡萝卜丝,
高丽菜丝,

佐料:

柴鱼刨片,
海苔粉屑, (seaweed rice seasoning)
日式美奶滋, (或专用的乌醋酱, 我没买到)

做法:

面糊:

- 把蛋打散, 加水, 搅匀,
- 把面粉, 盐, 发粉, 柴鱼粉, 和好, 倒入蛋液里, 这样可以尽量在短时间里拌匀面糊, 而不会打上筋来. 用有口槽的和面盆可以很方便倒糊进入锅子.

慢火加热 Takoyaki pan (or Danish Aebleskier pan), 用刷子每个槽都刷遍油, 倒入面糊留1/3 的地方, 往里面填东西, 等边圆有点固定, 就开始用竹签转动他们, 这时往里面加补面糊, 再转, 直到变成圆球, 补加一点油, 再慢火煎炸金黄, 就好了.

补回贴:  整个过程都是在炉子上,  翻转时哪里是不平和有缺口就往下翻, 面团不离开锅,里面是有空心的. BB&B 是卖 $19.99 还有一些小配件工具. 在日本是摊头小吃, 还时毛"翻转吧",在桌上给客人自己边翻边吃.

做完了想到拍一下锅子, 在 BB&B 买的, 是铸铁的, 不粘, 很好洗,

吃时加佐料, 里嫩外脆, 很好吃, 也很好玩.

用其他的填料, 甜的, 咸的, 也可以用来做不同的小吃. 我第一次用了pancake mix 做的, 涂蜂蜜, 奶油, 做早餐, 配咖啡, 很好吃.
