Red Bean Rice Cake by Tianhui

Ingredients:

1.      15 oz. can of sweetened red bean paste (use ½ can only)

2.      1 box of sweet rice flour (use Michiko brand)

3.      ¾ cup cooking oil

4.      3 eggs

5.      2 ½ cups of milk

6.      1 cup sugar

7.      1 Tbsp. baking powder

Instructions:

a.       Use Electric Mixer, mix ingredients from (2) to (7)

b.      Mix at medium speed for 2 minutes

c.       Mix at high speed for 2 minutes

d.      Grease long baking pan (13x9x2)

e.       Pour 1/3 of mixture onto a smaller mixing bowl, mix in red bean paste

f.       Pour 1/3 of the mixture onto the greased pan, put in the oven 20 minutes, then add the red bean mixture as the 2nd layer, put in the oven another 20 minutes; then pour last 1/3 on top spreading evenly across the pan for 20 minutes

g.      Each time bake 20 minute at 350 degree. If you like the surface to be golden brown, then cook for another 10-15 minutes

h.      Cool for 15 minutes before slicing and removing from pan
